To My Graduates…

Once again it is that time of year, where two of our young staff members are graduating.  Hopefully, they will have learned more than how to bus a table while here with us at the Folderol.  Working in a restaurant provides you with the opportunity to meet many different genres of people while also having to be professional and ensure your guests experience is a pleasurable one. 

As in life sometimes you are the student and sometimes you are the teacher.  During the course of their time at the Folderol, I have learned from them and hope they have learned from me; not only the restaurant busienss but about life in general.  I act not as a parent but as a mentor and use the restaurant as a tool to show young people how to deal with everything from dealing with guests to navigating the world at large.  One of the things that always tickles me is when old bus staff come back to visit and share with me a lesson they learned while working at the Folderol and were able to apply to their real life.

I always think back to my bus boy Ben, who now travels the world and told me that I inspired the travel bug in him.  Honestly, I wish I could have seen some of things he has seen and traveled along with him.

To My Current Graduates and those that have come before you:  Always remember and never forget

To be thoughtful and kind,

That the food you eat feeds not just your belly but your soul,

Never be afraid to try something that’s odd or new (escargot ha!ha!ha!) it may turn out to be the best thing you’ve ever done.
